It's OK

Its Ok Thursdays

It's OK that this morning totally sucked because I am now in my pajamas. Nothing can ever go wrong when you are at home in your pajamas. Right??

It's OK that my car decided that it doesn't like me anymore and doesn't want to go into gear because my hubbs will now be dealing with it. I'm not, so over it.

It's OK that Mr.Lexus Man wanted to tailgate me when I was already doing 10 over the speed limit because I slowed down and went under the speed limit. 

It's OK that I had to register my child for Kindergarten because she is more ready then I am.

It's OK that I locked myself out of the house because I shoved my kid through a window.

It's OK that this morning has been pure hell because I had Sarah to vox with and she listens to my ramblings.

Cinnamon Roll Waffles

Today I am joining The Pinspiration Project to share with your my little discovery from Pinterest.
 
Every now and then I will get in the mood to cook my little family a Sunday breakfast of some sort. I came across Cinnamon Roll Waffles on Pinterest and knew I had to make them SOON!! They were quick,easy, and really didn't make a mess in the kitchen. 

What you need:
1 package of Cinnamon Rolls with Cream Cheese Icing
1 cup powdered sugar
3 tbsp milk
1 tsp vanilla.

Heat waffle iron and spray with non-stick cooking spray.
 Place one cinnamon roll in the center of the waffle iron and cook for about 3 minutes or until the waffle is cooked through and golden brown.
In a small bowl mix together the icing, powdered sugar, milk,and vanilla until the glaze is smooth.
Drizzle the glaze over the hot waffles and enjoy!

Good Morning! The weekend is almost over and that means it's time to link up with Ashley and Neely for
Sunday Social



This weeks questions are:
1. What is your ideal way to relax? I don't get to relax often but when I do I love to soak in a hot bubble bath with the door locked and the music cranked up so I can't hear Jayla attempting to come in. I also love to snuggle on the couch with the hubbs and watch a movie.
2. Where is your favorite place to be? My grandparents house. It's just peaceful and serene there. All of my fondest memories revolve around my grandparents and their home. When I'm there it seems that the rest of the world just melts away and all the problems and worries go with it.
3.Who do you consider your biggest role model? My grandma. Can't you tell that I absolutely adore them? If I can be half the person she is then I will be pretty amazing. I get a lot of my qualities from her and have been blessed that she passed down her cooking and baking skills to me. One day I hope to be able to make cakes as beautiful as hers once were. 
4. What does your life look like in 3 years? I'm hoping to have another child by then and taking the plunge into home ownership. We have a 3 year plan to save up money and put a home on my mother-in-laws land. Being a home owner scares me and I guess I have to grow up at some point and take that plunge.
5. If you could go back and change one decision what would it be? Nothing. Yes, there are things that I wish I would have done differently but all of my choices have led me to where I am today and have made me who I am. If I go back and change one thing, it could change the outcome for what and who I am today. I'm not risking that.
6. What is your biggest accomplishment in life so far? I've always hated this question. I feel that I haven't done anything spectacular or consider an accomplishment worthy of this category other then my child. My child is by far the best thing that I have ever had or done. She brings so much joy to my life and I love being her mommy.

Happies and Crappies [2]

It's that time of the week again! We are linking up with Stephanie and Sarah for Happies and Crappies

Happies
1. Spending Monday morning snuggled up my nut-nut watching cartoons.
2. Cleaned nut-nut's room and it's still clean 5 days later. That is a record!
3. Got some good books at the library.
4. Got a new phone that will not randomly turn it's self off whenever it wants.
5. Got my Super Bowl menu finalized!! So ready for some good game day food.
6.Hubbs got out of class early every night this week. That means I got more snuggle time with him. I feel like we barely see other.

Crappies
1. Had to download all my apps again and attempt to organize my phone to the exact way as the last one. 
2. Kicked out over $500 on some tools that my hubbs needs for class.
3. Had to grocery shop while it was sleeting. It wasn't bad but I'm a southern girl and it's just to darn cold for that mess.
4. My neighbors got a new dog. My heart breaks for it. It's cold outside, it's stuck on a small chain,and it's dog house is a piece of shit. Makes me so angry. If you do not have the time to properly take care of an animal just DON"T GET ONE!!!

Parmesan Potato Wedges

This recipe is one of my favorite ways to prepare potatoes. My picky little eater will not eat potatoes unless they are cooked like this. 
If you have a small family, I would cut the recipe in half.

What you need:
6 medium baking potatoes

1/3 cup butter,melted
1 clove garlic,minced
1/4 cup Parmesan cheese or a little more if you like a lot of cheese :)
1 tsp of Italian seasoning

Preheat oven to 425 degrees and line a baking pan with foil. Cut each potato into wedges and place into a large bowl.

Add the melted butter,garlic,Parmesan cheese,and Italian seasoning to the bowl of potatoes and stir well to the potatoes.

Place the potatoes onto the foil lined baking pan and bake for 30 minutes or until tender. You may have to scoop some of the yummy cheese off the bottom of the bowl and spread on top of the wedges.

Adjustments

Last week was the start to a few changes in our little household. My husband started school again and attends classes in the evenings so it's been just me and the kid. 

She is not fond of these changes yet.

From the time he walks out the door all I hear is, "I want my Daddy," and "When is Daddy coming home?" By the time bedtime rolls around I've had enough of hearing "Daddy" come out of her mouth. It makes me sad for her because I know she really does just want her Daddy. I know she doesn't understand why he isn't home with us like he normally is. I miss having him at home in the evenings with us too.

I've been trying to do little extra special things with her in the evenings to distract from the fact that he isn't home. Today, we went to the library and had some girl time and picked out a couple new books to read together at bedtime.

Can we just skip the adjustment period and get to the part where it all has become routine for her and I


She put on a puppet show for me at the library.

Happies and Crappies

I'm fashionably late on this one but I've joined my first link up! Happies and Crappies with Stephanie and Sarah. Love the idea! The button is pretty cute too. Can never go wrong with glitter.

Happies:
  • Nut-nut had a few extra days off from preschool so we got more cuddle time.
  • Celebrated my husbands 32nd birthday
  • Got to spend time with my Grandma. I just adore her.
  • Made my first ice cream cake ever and it was amazing!
  • Jayla has been extra loving.
  • I got to sleep in one day this week. That rarely ever happens. 
  • Had lunch with some great friends
Crappies:
  • It rained for 2 weeks straight and was really cold
  • The weather teased me with a chance of snow. I really want snow.
  • The medicine I'm having to take has my hormones out of whack.
  • My husband started back to school so I'm without him 3 nights a week
  • I spent way to much grocery shopping this week. I hate spending money

10 Things You Didn't Know About Me

1. I'm a little OCD with my eating habits. My food can't touch and I eat one thing at a time.

2. I suck at baking cookies. I'm a great cook and bake my ass off but when it comes to cookies, I just fail.

3. I wear sunglasses year round. Love my sunglasses,can't live without them.

4. I hate being hot indoors. I'd rather it be cold then hot.

5. Mopping. Hate it with a passion. I'd rather pour hot sauce in my eyes. Ok, maybe not really, but you get the idea.

6. I hate being late or feeling rushed. It's a pet peeve of mine and it's one the quickest ways to piss me off.

7. I'm a sucker for Christmas movies. Every single one of them seriously makes me cry.

8. I can't sleep with a top sheet.My feet have to be sticking out from under the covers, and it always ends up at the end of the bed anyways so I see no point in having one.

9. I meal plan according to what is on sale. Every week.

10. My heart longs to be in Savannah again. It's such a beautiful city with a rich history that truly captured my heart. I mean, how gorgeous is that little street? I could see myself living there one day.

Twix Ice Cream Cake

On Tuesday, my hubbs turned the big 32!! We had a quiet little birthday dinner and dessert at home with a couple of family members.

Normally I will make a cake with butter cream icing, but my mixer decided to blow it's motor last month. So that was out.I figured the next best thing would be an ice cream cake and my little hand-held mixer should be able to handle this task. 

The Twix Ice Cream Cake turned out really good and I knew I had to share this deliciousness with you. My only suggestion would be to use less chocolate or use some of that Magic Shell because the chocolate was a little hard to cut and eat around.

Here is what you need:
1.5 quart Vanilla Ice Cream, slightly soften ed
16oz jar of caramel sauce
1 cup milk chocolate chips
1/2 cup butter,softened
2 Tbsp sugar
1/4 cup brown sugar
1 cup flour
1/2 tsp vanilla extract

Spread the softened ice cream into a 13x9 baking dish.Cover place into the freezer for 2 hours to set.
 
Preheat oven to 350 degrees. Cream butter and sugars together in a bowl. Stir in flour and vanilla until well mixed.
Spread dough into a foil-lined 8x8 baking dish and bake for 15 minutes or until slightly golden brown. I found that it spread better using a butter knife versus my spatula.
 Once it is slightly golden brown remove from oven and let cool completely. Once cool break the cookie into chunks.
  
Pour the jar of caramel on top of the ice cream after it has set.
Now take your cookie crumbles and sprinkle them all over the top of the caramel.
Melt down your chocolate chips until smooth and drizzle on top of the cookie chunks. Recover and place it back into the freezer for at least 6 hours or overnight to completely refreeze. Slice into squares and serve.
I always use a double boiler to melt down my chocolate but you could use the microwave.

Makeover

My blog had a little makeover over the weekend! Isn't it adorable? I am absolutely tickled with it!

Third Wheel

Date night didn't go according to plan. It ended up being a semi-date night with a little third wheel.

Jayla got a little homesick and was ready to come home a little after lunchtime. She didn't sleep so well at Grandma's house and when she gets really tired, she just wants home. Can't blame the kid, there is nothing like home.


Once we got home, I turned on Alice in Wonderland and she knocked out pretty quickly. It was much needed, she was down right whiny. 
She woke up quite cranky and I was not dragging her out to dinner in such a foul mood.

Our date night turned into take out from a yummy local burger place in town and a movie at home with my little family.

Plans may not have panned out like they were suppose to but it was still a great night in with my little family.  

After Jayla went to bed, the hubbs and I watched Looper. I wouldn't recommend it.

Finally Friday

It's finally Friday! Yay! It seriously felt like the weekend was taking it's sweet little time to get here.

I like Friday's, it's payday! Even if we are broke again by the end of the weekend. 

Friday mornings tend to be a little hectic between grocery shopping, paying bills, and trying to get the groceries all put away before I have to pick Jayla up from preschool. By the time I pick her up, I'm slap wore out!

Jayla is going to spend the weekend with grandma so mommy and daddy are going out on a date night this weekend! Woohoo! I love date night with my hubbs.

Saturday morning my bestie is having me take pictures of her and her whole family.When I say whole family, I mean the whole family. We are talking parents, brother, sister-in-law, the whole shebang.  A tad bit nervous about doing it. I am not a photographer, nor do I ever claim to be. I'm just a mom with a camera. Wish me luck on that adventure!

Easy Cheesy Garlic Pinwheels


 Not only are these quick and easy, but they are yummy with all of the gooey, cheesy and garlic goodness. Even my picky child who lives off of chicken nuggets loves these.

First you will need to soften a couple tablespoons of butter in a small bowl or ramekin. Add some fresh minced garlic and Italian seasonings to your butter. Mix well.
Next, take a package of regular pizza dough and spread it out into a rectangle.Now smear all of your buttery-garlic goodness all over your pizza crust. Now grab some shredded Mozzarella or any cheese you have on hand and sprinkle it all over that bad boy. You can use homemade pizza dough but I normally don't have time for all of that. 
Then you just roll it up into a log.
 Then slice it up and place into a well-loved baking dish. If you are adventurous like I am, go ahead and sprinkle some more cheese on top.
Bake at 400 for about 12-15 minutes or until golden brown.

Game-Changing Curls

I have this hot-mess, unruly, head full of curly hair.
 I've always had a love-hate relationship with my hair. I think most girls do.
I don't like a lot of product in my hair and with curly hair you pretty much have to use some sort of product.
I have tried just about all the products out there for my hair and never liked any of them. They either didn't hold my curls or left my hair crunchy and hard. No body likes crunchy hair.
Through the battle of products and them all failing me I came to a point where I didn't wear my hair curly often.
Then I discovered Paul Mitchell's Curls Twirl Around. This stuff is seriously game-changing! It holds my curls all day long and doesn't leave my hair crunchy. It barely feels like I have any product in my hair at all! 
My curls are the prettiest now then they ever have been. I am now excited to embrace my curls. My curly hair and I are finally rekindling our little romance.
If you have curly or wavy hair, get some and quit battling all of the other hair products.
