Sunday Social

The weekend is almost over and that means it's time for another Social Sunday.

This weeks questions are all about Valentine's Day.

1. What is the best Valentine's Day you ever had? It would have to be my first Valentine's Day that I spent with the hubbs. We had only been dating for a couple of months at the time. He showed up to my work with beautiful flowers and that night we drove 2 hours to my favorite Korean restaurant. It's a mom and pop, hole in the wall kind of place but you get the real deal from them. Oh boy, do they feed you. 

2. What is the worst Valentine's Day you ever had? It would have to be 8th grade when a boy made a really mean comment to me. It ruined my whole day. Boys suck.

3. What did you do this Valentine's this year? I was one of the class moms for nut-nut's class so I helped set that up. Surprised the hubbs at work during his lunch break with some candy. The hubbs was at school that evening so nut-nut helped me make heart shaped pizza for dinner. 

4. What is your best Valentine's idea if you are single? Have fun and don't stress over V.day. It's just another day. An over commercialized one at that.

5.What is your favorite Valentine's candy? Dove chocolate hearts. It has to be the heart shaped ones.

6. Favorite Valentines memory for you're childhood? It isn't necessarily my favorite memory but it is one that stands out in my mind the most. I think my brother was about 2 or 3 at the time. My mom gave me one of those heart shaped boxes with the assortment of truffles on Vday morning. I placed it on the very top shelf of my bookcase before I left for school. I couldn't wait to get home and eat my candy. I rushed into my room to get my candy to discover it was missing. I look in my brothers room where he is taking a nap and he has my candy. It is caked all over the bottom of his shoe, all over his face and blanket. The little booger climbed my bookcase and ate my candy after he finished his. I was so mad!

Happies & Crappies [4]

Happies
1. Nut-nut is all registered and ready to start Kindergarten in August.
2. My wonderful hubbs fixed my car and it didn't cost us anything!
3. Got to spend time with my grandparents on Sunday
4. Found a book I've been dying to read at the library.
5. Had a little mommy-daughter lunch date
6. Hubbs got a great evaluation at work and is up for a nice raise once the paperwork goes through.
7. I got to vox with my best friend Sarah(you can find her here) and she listened to my rambles.
8. Jayla colored a picture of a pig in school and her friend's voted hers as the best. 
9. My blog was sorta hacked by Sarah. You can find that post here. 
10. I got my nail tape in the mail and had fun playing with it. It's always a good day when I get new nail stuff.
 11. Addicted to a new game on my phone. Ruzzle, it's awesome.

Crappies
1. My car broke down. Car troubles always suck
2. I locked myself out of the house and had to shove Jayla through a window.
3. Jayla got sick all over the bathroom not even 15 minutes after I cleaned it Saturday
4.She also threw up all in my bed at 6am on Monday.
5. Jayla missed her field trip and I felt so bad for her.
6. Bills,bills,bills, I hate em     
7. I wanted some Dove Valentine chocolate and went to pick up some while grocery shopping and my Walmart doesn't have any!!!! They aren't even selling it. What the hell?!?! 
8. My town sucks, it doesn't have a target, and if it did I bet they would have Dove Chocolate.

Twix Ice Cream Cake

On Tuesday, my hubbs turned the big 32!! We had a quiet little birthday dinner and dessert at home with a couple of family members.

Normally I will make a cake with butter cream icing, but my mixer decided to blow it's motor last month. So that was out.I figured the next best thing would be an ice cream cake and my little hand-held mixer should be able to handle this task. 

The Twix Ice Cream Cake turned out really good and I knew I had to share this deliciousness with you. My only suggestion would be to use less chocolate or use some of that Magic Shell because the chocolate was a little hard to cut and eat around.

Here is what you need:
1.5 quart Vanilla Ice Cream, slightly soften ed
16oz jar of caramel sauce
1 cup milk chocolate chips
1/2 cup butter,softened
2 Tbsp sugar
1/4 cup brown sugar
1 cup flour
1/2 tsp vanilla extract

Spread the softened ice cream into a 13x9 baking dish.Cover place into the freezer for 2 hours to set.
 
Preheat oven to 350 degrees. Cream butter and sugars together in a bowl. Stir in flour and vanilla until well mixed.
Spread dough into a foil-lined 8x8 baking dish and bake for 15 minutes or until slightly golden brown. I found that it spread better using a butter knife versus my spatula.
 Once it is slightly golden brown remove from oven and let cool completely. Once cool break the cookie into chunks.
  
Pour the jar of caramel on top of the ice cream after it has set.
Now take your cookie crumbles and sprinkle them all over the top of the caramel.
Melt down your chocolate chips until smooth and drizzle on top of the cookie chunks. Recover and place it back into the freezer for at least 6 hours or overnight to completely refreeze. Slice into squares and serve.
I always use a double boiler to melt down my chocolate but you could use the microwave.
